Orange Phirni
Sweet yogurt flavoured with oranges

Serves: Four

Time required: 45 minutes plus soaking time


Ingredients How to?
  • 500 g rice
  • 3 oranges
  • 1 litre milk
  • 300 g sugar
  • 1/2 tsp (2 ml) orange essence
  • a handful of mixed dry fruits, chopped, for garnishing
  • 1 sheet silver varakh.
  1. Using citrus juicer, extract orange juice and keep aside.

  2. Wash and soak the rice for half an hour. 

  3. Drain out the water. 

  4. Grind the rice to a fine paste. 

  5. Bring the milk to a boil. 

  6. Add the rice paste and keep stirring constantly.

  7.  Cook till done and the milk is thick.

  8.  Add sugar and stir well

  9. When cool, add orange juice and orange essence and mix well. Set in clay pots. Garnish with chopped dry fruits. Decorate with silver foil.

  Serve chilled.
